Jaggery is a natural product of sugarcane. Generally, Jaggery is made from two products: sugarcane and date palm tree. Jaggery is made by evaporating the syrup or juice of certain kinds of date palm tree or sugarcane.

The quality of Jaggery can be identified by its color. Brown color Jaggery is of the purest quality whereas golden yellow colour is less pure. Due to its grading scale, there are chances that merchants add color and chemicals to stimulate golden color in Jaggery.

Jaggery contains glucose and sucrose. It also has minerals and vitamins which are not found in refined sugar. Calcium, phosphorus, magnesium, potassium and iron and traces of zinc and copper are the main mineral contents in Jaggery.
The vitamin contents in Jaggery include folic acid and B-complex. Moreover, it is also a good source of energy.

Top Jaggery exporting countries are Brazil, USA, Thailand, Germany, France, Australia, Netherlands, Belgium, China and Mexico.
Nigeria, Nepal, United Arab Emirates, Kenya and Sudan are the major importing countries.
